Service Description

Get introduced to phyllo dough and grape leaves, the flavors of Greece, and learn how to temper eggs for sauces and custards. Paired with wines from Santorini and the Peleponnese. Dolmades with Avgolemono -- grapevine leaves filled with ground meat, rice and herbs. Stovetop cooking yields the base for a velvety lemon sauce, avgolemono, which has many other uses. (Can be adapted vegetarian) Tiropite or Spanakopete -- these are crispy cheese-filled triangles of buttery phyllo, perfect for parties and great to have on hand in the freezer. Baklava Orthi -- an elegant variation of the flaky diamond shaped pastries filled with spiced nuts. These are lightly glazed with syrup, crispy and utterly heavenly. Wines: Mavrodaphne, Assyrtiko.
