Classic Chickpea Fritters - using chickpea flour, these crispy GF treats are served between slices of sesame seed bread in our hometown of Sciacca. But they make a great appetizer along with a bowl of savory caponata. Eggplant Caponata – the best known of the agrodolce, or sweet/sour, appetizers or sandwich fillings, this dish has an interesting backstory. An excellent introduction to eggplant, which will have you falling in love with this versatile vegetable. Arancini – saffron-infused rice balls stuffed with beef-pea ragu ( or vegetarian if desired), rolled in breadcrumbs and deep fried to look like “little oranges”. Perfectly adaptable as hors d’oeuvres for your next gathering. Pairings: Sicilian Nero d'Avola, Sparkling Rosé
