Classic Chickpea Fritters - using chickpea flour, these crispy GF treats are served between slices of sesame seed bread on the streets of Palermo. They make a great appetizer or snack. Arancini – saffron-infused rice balls stuffed with ragu ( or vegetarian if desired), rolled in breadcrumbs and deep fried to look like “little oranges”. Perfectly adaptable as hors d’oeuvres for your next gathering. Ricotta Cream with Pistachio “Couscous” – a light and easy variation on cannoli. Pairings: Sicilian Nero d'Avola, Sparkling Rosé
