We learned a thing or two in the kitchen over twenty years of stays in Rome. So now we're ready to share some secrets so you can taste the famous and unique flavors of the Eternal City. Spaghetti Cacio e Pepe -- Little known and rarely made correctly outside of Rome. Gaining popularity now, you can learn the secrets to make this popular pasta the right way. Saltimbocca – meaning “ jump into your mouth” because they are so good! Traditionally made with veal, we will use chicken and learn the technique for making pan sauce. Crostata – lemon-kissed, shortcrust pastry with apricot or berry preserves, perfect for dessert and breakfast.
