Service Description

In this class, we will make the proper dough for filled pastas like ravioli and enjoy them with simple sauces. We will make four filled pastas from Piedmont and Emilia-Romagna that are sure to impress. Ravioli – a classic, filled with a puree of porcini mushrooms, complimented with a sauce of brown butter and sage. Agnolotti del plin – filled with potato, Parmigiano Reggiano and truffles in a creamy butter sauce. Cappelletti – “ little hats” filled with three cheeses and spinach and lightly sauced with tomato to allow the pasta to shine. Tortelli Piacentini – an impressive bundle of cheeses & spinach which is closed by an intricate braid with a tail.
